Improved Hollow Crown
Parsnips seem rather underappreciated. Sweet and creamy when cooked with an earthy flavor that is great in veggie pies, beef stew, roasted in the oven or grilled, this variety is extra sweet and a heavy producer. A bit tricky to get started, they need 2 weeks to germinate and constant moisture during that time. After a frost they will get very sweet and can store in a cool basement or cellar for many months!
