True to its name, these are green-ripe at 60 days from transplant and red ripe at 80 days. What is salsa or pico de gallo without a good jalapeño? I grow these for making into chipotle peppers: jalapeños smoke dried. Amazing. This particular variety is plentiful, hardy and spicy, which is just what a Jalapeno should be.
