Believe it or not, getting standard celery to form a crunchy creamy yellow “head” is actually quite a challenge. So I grow ‘cutting celery’ for all my cooking needs. Growing in a loose fashion with slender, leafy, aromatic stalks, just snip off what you need and done. The flavor is slightly stronger than the heading type of celery, but not necessarily bitter. I use it fresh or dried. Grows up to 3’ tall if not kept trimmed.
