Collards are a wonderful delicious and nutritious green which grows very well in the north and south alike. Highly nutritious, the key to overcoming their strong flavor is merely in the preparation. This variety is really stocky and long-producing, and can go through mild winters with a little cover here in the north , or no protection whatsoever in the south. My husband from Kenya Africa has introduced me to a number of great recipes using collards (and Kale) which I will be sharing throughout the summer. Vates is a variety I like because It stays shorter and doesn’t fall over. Big wide flat leaves are easy to clean and prepare. Plant it once and keep plucking the leaves off throughout the summer and winter!
